Preparing a Special Lunchbox for the Daycare Center or Kindergarten Picnic.

Deciding what to pack for my child’s picnic lunch was a real challenge.


Waking up at 4 a.m.,
I prepared a lunchbox for my little one. Here’s what I packed:


1. Avocado Egg Sandwich


- Trim the crust off the sandwich bread.
- Lightly spread a thin layer of mayonnaise.
- Add baby cheese, mashed avocado, and hard-boiled egg as the filling.

The taste was mild, but the avocado added the perfect finishing touch!



2. Inari Buckwheat Soba Kimbap


This one was a bit more challenging but so worth it!

- Prepare the inari (tofu pouches): Soak them in hot water to remove excess sweetness.
- Cook the buckwheat soba noodles: Boil them and drain thoroughly. Season the noodles lightly with baby soy sauce, sesame oil, and a touch of plum extract to taste.
- Assemble: Gently rinse the inari under clean water, squeeze out excess water carefully without tearing them. On a small sheet of nori, layer the prepared inari, soba noodles, tamagoyaki (rolled omelet), and optional veggies like spinach or cucumber.
- Roll tightly but keep it compact for a baby-friendly finger food size.

The flavors were mild yet satisfying, and adults could even enjoy this as part of a healthy, low-calorie meal!

 

3. Fruit Platter


Finally, I added a fruit platter for dessert—calling it “luxury fruit platter” just for fun! I was a bit worried about how the figs would hold up, but thankfully, they were just fine.

Preparing this lunchbox was a bit of an effort, but seeing how much my little one enjoyed it made it all worthwhile!
